Ingredients

  • 2 cups almond flour
  • 1/4 cup coconut oil
  • 1/4 cup honey
  • 1/4 cup fresh lemon juice
  • 1/2 teaspoon salt
  • 1/2 cup low-fat Greek yogurt
  • 3 eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 180°C (about 350°F).
  2. In a bowl, mix together the almond flour, coconut oil, honey, and salt until well combined.
  3. Add the eggs, yogurt, and fresh lemon juice to the mixture and blend until smooth.
  4. Stir in the vanilla extract and continue mixing until everything is fully incorporated.
  5. Pour the batter into a greased baking pan and bake for 30 minutes.
  6. After 30 minutes, check the cake by inserting a knife or a wooden skewer into the center. If it comes out clean, the cake is ready.
  7. Remove the cake from the oven and let it cool for 10-15 minutes before serving. You can garnish the cake with lemon slices and a drizzle of honey for added flavor and decoration.
